Do what we do when we run out of juice occasionally. Use dried elderberries. These are not from our farm, instead they are from a reputable herb company that has been in business over 40 years. This is where we get out dried berries. While we prefer the juice, these are certainly a great second choice. Since it will be a while before you have berries of your own, if you are starting plants, try these out. Put a heaping tsp of dried berries in a cup of steaming hot water and cover for about an hour. Strain and sweeten with raw honey. We are not allowed to make health claims for elder products, but you can do your own research.
